Pizza Burgers With Avocado Pesto

For some reason I associate Sunday with burgers (veggie burgers, of course!) Maybe it’s because on Sundays I’m lazy and burgers are a simple and satisfying meal to throw together. On second thought, although my household is not that into sports I know football is in full swing, and football and burgers go hand-in-hand.  There’s no doubt in my mind that these pizza burgers with avocado pesto will make the perfect addition to the big game day!

These are not your typical veggie burgers, which is cool. As Chef Chloe puts it: California meets Italy in these tangy pizza burgers layered with a creamy avocado pesto. They are simple to make and I absolutely love how unique the flavors are. If you’re having friends over for football or just hanging out – I highly recommend serving up these!

SERVES 6

AVOCADO PESTO INGREDIENTS: 

1 avocado

1 garlic clove

1/2 cup packed fresh basil

1 tablespoon lemon juice

1/2 teaspoon sea salt

1/4 teaspoon black pepper

1/4 cup water

PATTIE INGREDIENTS:

1 (15-ounce) can white beans, rinsed and drained

1 garlic clove

3/4 cup chopped sun-dried tomatoes

1/2 cup packed fresh basil, plus extra for assembly

1/4 cup bread crumbs

1/4 cup all-purpose flour

1 teaspoon sea salt

1/4 teaspoon black pepper

2 tablespoons olive oil

EXTRAS:

Hamburger buns, lightly toasted + optional toppings (tomatoes, lettuce, ketchup, sliced red onions, fresh basil, etc.)


INSTRUCTIONS:

For the avocado pesto: Combine all ingredients in a food processor and process until smooth.

For the patties: Place beans, garlic, sun-dried tomatoes, basil, bread crumbs, flour, salt, and paper in a food processor and pulse until just combined, stopping frequently to scrape down the sides. Using the palms of your hands, form mixture into 6 or 7 three inch patties. (I like to wet my hands before doing so to prevent sticking).

In a large non-stick, heat oil over medium-high heat and panfry patties, letting them cook 3 to 5 minutes on each side. Once patties are nicely browned, remove from heat and drain on paper towels.

To serve: For each burger, layer a patty, a dollop of avocado pesto, and any additional toppings on bun. Serve immediately!
