Here are a few of my favorite books that have inspired me throughout this journey!
I was pretty surprised to see the name of a distant relative of mine, Michael Symon, on the front of one of my favorite vegan chef’s cookbook (Chloe Coscarelli). Michael, who is an American chef, restaurateur, television personality, and author is a KNOWN meat fanatic. After all, his one cookbook is called “Carnivore.” But after reading his forward, I was super impressed with how highly he spoke of plant-based foods/cooking. He even explained that what chef Chloe is doing with food is some of the craziest most innovative stuff he’s ever seen come out of any kitchen, vegan or not.
Michael states: “Chloe and other vegan chefs are at the forefront of a culinary revolution that is helping us realize that healthy food and delicious food can, and should, go hand in hand.”
Many people may think vegan food is boring and bland but that is a huge misconception. I’m happy Michael has shined a spotlight on how delicious and nutritious plant based foods can be, as well as saying this is a culinary revolution!
This book has inspired me in so many ways. It made me laugh, cry, smile, & at times, I felt outraged; however it was an absolute treasure filled with valuable information regarding the harsh realities of cruelty in the farming & animal testing industry, followed by happy stories that warmed my heart. Jenny Brown is a true inspiration!

Russell Simmons is a huge vegan activist and this book is great for those thinking about switching to a plant-based lifestyle. He breaks down why and how to go about doing this, clear and simple. He even adds some humor in the mix too!
A great guide for beginners! This book is filled with beautiful illustrations and vibrant colors, which really sets the tone to what a plant-based diet is all about. There’s some recipes in the back too!
