This vegan parmesan takes only a few minutes to make and can be stored in your pantry for several months. The only ingredients are walnuts, nutritional yeast, Italian herbs, garlic powder and salt!
I started using nutritional yeast a little late in my vegan game, and I definitely regret that now! I guess I was scared to use it, unsure what it was, etc. But now that I have learned all the benefits and have experienced firsthand the nutty, “cheesy” flavor it gives to meals; I try to incorporate it in my dishes as much as possible! Here are a few benefits of nutritional yeast:
*It’s a vegetarian source of Vitamin B-12.
*It’s high in protein
*It’s high in fiber
*It’s gluten free
*It’s a great source of folic acid
This vegan parm recipe has made a great addition to our pasta dishes. It’s also perfect to sprinkle on mashed potatoes, popcorn, soups, chilis, or even on a salad. Anything you would typical put real parm cheese over – this could work. Here’s how to make it…
All you need is a food processor and 1 cup of walnuts, 1 cup nutritional yeast, 1 tbsp garlic powder, 1 tbsp Italian herbs & a tsp of salt. Pulse in processor for 10-15 seconds. That’s it!
NOW, on my menu tonight is mac and “cheese” topped with a difference vegan parm recipe. It requires a few more ingredients and a little more steps, but I’ll be sure to let you know how it goes! In the meantime, we’ve been using this one for months and I promise — you can’t go wrong!
